Welcome home…

Despite what the temperature is here in sunny Los Angeles, it’s officially Fall, and I could not be more excited about it. As we speak, I am in full on Fall prepping mode. I’ve rearranged my closet to have easier access to cozy sweaters, warm coats, and super cute booties. I’m in the middle of decorating the front porch with pumpkins and gourds (praying my puppy does not eat them) and have broken the seal and made my first pumpkin recipe of the year, Pumpkin Muffins. To me, there is no better “welcome home” greeting than the smell of a delicious baked treat fresh out of the oven! If you’d like, you can add chocolate chips or even top with roasted pumpkin seeds and/or Pumpkin Butter, but if you’re a purist at heart, they are out-of-this world on their own too. Pumpkin Muffins

Yields: 12 Regular Sized Muffins

Prep Time: 10-12 minutes

Cook Time: 20 minutes

Ingredients

  • 1 3/4 Cup Unbleached All Purpose Flour
  • 1 15 oz. can of Pumpkin Puree
  • 1/4 Cup Granulated Sugar
  • 3/4 Cup Brown Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 tsp Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Ground Nutmeg
  • 2 Eggs
  • 1/4 Cup Vegetable Oil
  • 1 tsp. Good Quality Vanilla Extract
  • 1/4 Cup Warm Water

Directions

  1. Preheat the oven to 375 degrees.
  2. Prepare a muffin pan with liners.
  3. Mix All Purpose Flour, Baking Soda, Cinnamon, Cloves, Nutmeg, Salt and Ginger in a Medium Sized Bowl.
  4. In a Stand-up Mixer or with a Hand Mixer, mix together sugars, brown sugar, eggs, vanilla extract, vegetable oil, warm water and pumpkin puree.
  5. Pour Flour and Spices mixture into the wet mixture and mix until incorporated.
    1. Feel free to fold in 3/4 Cup chocolate chips if you want here. 🙂
  6. Fill each cupcake liner 3/4 full then place in the preheated oven for 20 minutes, or until you can insert and remove a toothpick cleanly.
  7. Transfer to a cooling rack or the counter and enjoy!
    1. Adding a lil’ dollop of Pumpkin Butter or even a sprinkling of Roasted Pumpkin Seeds is a yummy option here.
